Especially wonderful when it still holds a froth after blending. No one, believe me, no one will ever be able to tell you what this soup is made of.
Ingredients
- Milk 15 fl oz
- Butter 5 oz
- Mustard Greens 2 tablespoons
- Salt to taste
- Balsamic Vinegar 2 tablespoons
- Semi-Smoked Sausage 20 oz
- French Baguette 2 pieces
- Ground Black Pepper to taste
- Chicken Broth 0 qt
Step-by-Step Guide
Step 1
Sear the pork loin well in a pot on all sides, drain excess fat, and pour in hot broth. If you don't have broth, it's okay; it's just for an intense flavor. The broth from the pork loin cooked in water will be strong enough on its own. Boil on high heat for 10 minutes, then cover with a lid, reduce the heat, and simmer for at least another 30 minutes.
Step 2
Meanwhile, cut the baguette and toast it very well in the oven.
Step 3
Remove the pork loin from the broth and add the croutons.
Step 4
Pour in the milk, previously brought to a boil. Cover with a lid and let the croutons soak well for about ten minutes. If you want the soup to be completely creamy, drain some of the liquid.
Step 5
Add the mustard, butter, and balsamic vinegar (if you don't have balsamic, add a bit of acidity with lemon juice). Season with salt and pepper and blend well with a blender.
Step 6
Serve with croutons!
