Bread Pudding with Apples and Cinnamon
Baking and Desserts • Italian
Description
Croissants may not be very fresh.
Ingredients
- Butter ½ tablespoon
- Green Apples 1 piece
- Cinnamon 1 piece
- Brown Sugar 2 tablespoons
- Apple juice with pulp ½ cup
- Croissant 3 pieces
- 10% cream 1 cup
- Sugar 5 tablespoons
- Egg white 2 pieces
- Ground Cinnamon 0.1 teaspoon
Step-by-Step Guide
Step 1
Peel the apple, remove the seeds, and slice it thinly. Crumble the croissants or cut them into small cubes.
Step 2
Melt the butter in a heavy saucepan over medium heat. Add the apples and the cinnamon stick to the hot butter. Sauté over moderately high heat for 3 minutes.
Step 3
Add the brown sugar to the apples and, while stirring, cook for about 2 minutes.
Step 4
When the sugar has melted and the apples begin to caramelize, pour the apple juice into the saucepan. Continue to cook over medium heat for 3-4 minutes until the apples are soft and all the juice has evaporated. Remove the cinnamon stick from the saucepan.
Step 5
Place the apples in a heatproof square baking dish (23x23 cm) or any other shallow baking dish with a capacity of 2.5 liters. Layer the crumbled croissants over the apples.
Step 6
Whisk together the cream, eggs, and a quarter cup of sugar. Pour the mixture evenly over the apples and croissants. Sprinkle everything with sugar (1 tablespoon) and place in the preheated oven.
Step 7
Bake at 375°F for 25-30 minutes. Wait until the top layer of the pudding firms up and slightly darkens, then remove from the oven.
Step 8
Let the pudding cool at room temperature for 10 minutes. Once slightly cooled, dust with cinnamon. Serve warm with vanilla ice cream.
