Bread Plate
Ingredients
- Coarsely Ground Rye Flour 20 oz
- Wheat Flour 5 oz
- Water 10 fl oz
- Salt 0 oz
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Combine the rye and wheat flour with salt, gradually add water, and knead into a firm dough.
Step 2
Wrap the dough in plastic wrap and leave it at room temperature for 30 minutes.
Step 3
Roll out the dough to a thickness of 1.5 mm.
Step 4
Grease a clay pot or another heatproof dish with vegetable oil. Place the dough in the pot, pressing it firmly against the sides, and trim off any excess.
Step 5
Prick the dough with a fork; the holes will close up during baking.
Step 6
Add the dry beans (you can line the pot with parchment paper beforehand) and place the pot in the oven preheated to 390°F for 15–20 minutes.
Step 7
Take the cooked plate out of the pot, pouring out the beans first, and brush it with an egg. Return it to the oven for 2 minutes.
