  • Butter 5 oz
  • Sugar 1 teaspoon
  • Sourdough Bread 6 pieces
  • Brown Sugar ¼ cup
  • Citrus Zest Mix ½ teaspoon
  • Salt a pinch
  • Panko breadcrumbs 0 oz
  • Strawberry 10 oz
  • Sweet Cream Butter to taste

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

In a small saucepan, melt the butter over medium heat, slightly reduce the heat and cook until the butter begins to brown lightly and smells pleasant. Stir and immediately remove from heat to prevent burning.

Step 3

Grease 6 muffin cups with brown butter and sprinkle with white sugar. Carefully trim the crusts from the bread slices and roll each piece flat, butter both sides with brown butter and place in the cups, pressing lightly against the sides.

Step 4

Cut the strawberries into quarters and transfer to a bowl. In another bowl, mix the brown sugar, zest, salt, and breadcrumbs. Stir and combine with the strawberries. Then add the remaining brown butter and gently mix again. Distribute the strawberries among the cups.

Step 5

Cover the pan with foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes until the strawberries are soft. Leave in the pan for 5 minutes, then transfer to a plate. Garnish with cream and serve.
