Description

Ingredients
- Water 3 glasses
- Lamb 20 oz
- Pea shoots 1 glass
- Potato ½ kg
- Apple 2 pieces
- Onion 2 pieces
- Tomato Puree 2 spoons
- Salt to taste
- Vegetable Oil 2 spoons
- Green peppercorns to taste
- Parsley to taste
Step-by-Step Guide
Step 1
Cut or chop the washed lamb into pieces weighing 30-40 grams, place them in a pot, and add enough water to just cover the lamb. Season with salt, cover the pot with a lid, and simmer on low heat, skimming off any foam.
Step 2
In a separate pot, bring the rinsed and sorted peas to a boil, covering them with cold water. Cook the peas over low heat.

After about 1 to 1.5 hours, add the cooked pieces of lamb to the peas, making sure to remove any small bones. Then, add the strained broth, finely chopped sautéed onions, diced potatoes and apples, tomato paste, salt, and pepper. Cover with a lid and simmer for 20-25 minutes.
Step 5
Before serving, sprinkle with finely chopped parsley.
