  • Sugar 5 oz
  • Fresh Berries 15 oz
  • Citrus Zest Mix 3 tablespoons
  • Water 0 qt
  • Potato protein 4 teaspoons
  • Corn Starch 1 tablespoon
  • Whipped Cream 25 fl oz
  • Salt a pinch

Step-by-Step Guide

Step 1

In a large saucepan, combine fresh or frozen blueberries, sugar, finely grated zest of 1/4 lemon, pour in water (2 liters), and place over medium heat. Stirring to dissolve the sugar completely, bring to a boil and cook until the berries are soft.

Step 2

Meanwhile, mix potato starch and cornstarch with 2 tablespoons of cold water and salt. Add a bit of liquid from the blueberry pot and mix thoroughly.

Step 3

Pour the starch mixture into the blueberry pot and cook, stirring, until the soup thickens. Remove from heat and let cool completely at room temperature.

Step 4

Serve chilled in deep bowls or cups with whipped cream.
