Description

Optionally, the pie can be served with whipped cream.

Ingredients

  • Sugar 5 oz
  • Chocolate Gingerbread Cookies 10 oz
  • Butter 5 oz
  • Corn Starch 2 tablespoons
  • Fresh Berries 0 lbs

Step-by-Step Guide

Step 1

Crush the ginger cookies and 2 tablespoons of sugar in a blender. In a 23 cm pie dish, mix the crumbs and melted butter with a fork. Press the mixture into the bottom and sides of the dish to form a small crust. Bake the crust in a preheated oven at 375°F for 8 minutes. Cool on a rack.

Step 2

In a saucepan, mix the cornstarch and 2 tablespoons of cold water. Add half of the blueberries and the remaining 100 grams of sugar. Bring to a boil over medium heat, mashing the blueberries against the sides of the saucepan with a spoon. Boil for 1 minute, stirring constantly. Remove the saucepan from the heat. Add the remaining blueberries.

Step 3

Pour the blueberry mixture into the crust. Cover with plastic wrap and refrigerate for about 5 hours, preferably overnight.
