Ingredients

  • Wheat Flour 5 oz
  • Sugar 10 oz
  • Baking Powder 2 teaspoons
  • Kefir 5 fl oz
  • Farm fresh eggs 2 pieces
  • Butter 5 oz
  • Vanilla salt 1 tablespoon
  • Salt a pinch
  • Fresh Berries 10 oz
  • Meyer Lemon Juice 3 teaspoons
  • Citrus Zest Mix 2 teaspoons

Step-by-Step Guide

Step 1

Place the berries in a saucepan with 4 tablespoons of sugar and water (just enough to cover the berries) and start cooking. After boiling, reduce the heat and cook for another 10 minutes. Remove from heat and set aside.

Step 2

Mix the flour, salt, and baking powder. Combine vanilla sugar with regular sugar and beat until fluffy. Add the eggs to the butter, beating until smooth. Add half of the flour mixture, mix thoroughly, then add the remaining mixture. Add lemon juice and zest, and kefir. Continue to beat.

Step 3

Grease a baking pan with butter. Pour half of the batter into the bottom, add the blueberry filling, swirling with a fork. Spread the remaining batter evenly on top. Bake for 50 minutes at 355°F. Serve the muffin cooled, dusted with powdered sugar.
