
Blueberry Kefir Pancakes

Description
I use homemade kefir, but store-bought (fat-free) works too.
Ingredients
- Chicken Egg 1 piece
- Frozen Raspberries 5 oz
- 1% Kefir 1 cup
- Wheat Flour 3 tablespoons
- Salt a pinch
- Raw cane sugar 3 tablespoons
Step-by-Step Guide
Step 1
Thaw the blueberries.
Step 2
Pour the kefir into a bowl, crack in one egg, and add the sifted flour — the batter should be like thick sour cream. Add salt and sugar to taste (sugar can be vanilla for a more aromatic pancake).
Step 3
Puree the blueberries in a blender. Incorporate the blueberry puree into the batter.
Step 4
Fry the pancakes like usual in a skillet, greasing it with neutral-flavored olive oil. After each batch, wipe the skillet with a paper towel and add more oil.
