
Blackcurrant Jam

Description
Blackcurrants and freshly grated ginger are the perfect combination for winter evenings.
Ingredients
- Black Rowan 0 lbs
- Sugar 1½ kg
- Water 1½ glasses
- Ginger 0 oz
Step-by-Step Guide
Step 1
Sort the berries and remove any stems. Place the currants in a basin and cover them with cold water. Usually, a lot of small debris will float to the surface; remove it.
Step 2
Drain the water and rinse the berries again, then place them in a colander to dry on a towel.
Step 3
Dissolve the sugar in water over low heat and bring the syrup to a boil.
Step 4
Grate the ginger using a grater.
Step 5
As soon as the syrup comes to a boil, add the berries along with the ginger and cook for 5–7 minutes.
Step 6
In a pot or saucepan, bring some water to a boil, place a shallow perforated dish on top, and set the jars on it. Leave them for 10 to 15 minutes.
Step 7
Remove the jam from the heat and immediately seal it in sterilized jars.
