Black Rice Pudding
Ingredients
- Wild rice 5 oz
- Sugar 5 oz
- Coconut Milk 15 fl oz
Step-by-Step Guide
Step 1
Pour salted water over the rice (the water level should be about an inch above the rice), bring to a boil, then reduce the heat and simmer with a tightly closed lid for 30 minutes. After that, stir in the sugar and coconut milk (300 ml) and bring to a boil over high heat, then reduce the heat and simmer uncovered, stirring occasionally, until the mixture thickens and the rice becomes tender but not mushy, for another thirty minutes.
Step 2
Remove from heat and let cool to room temperature, stirring occasionally for another thirty minutes. Just before serving, stir the pudding and divide it into serving dishes. Mix the remaining coconut milk and drizzle it over each portion of pudding.
