Black Forest Cake with Fresh Cherries

Ingredients

  • Chicken Egg 5 pieces
  • Wheat Flour 0 oz
  • 10% cream 15 fl oz
  • Cherry 10 oz
  • Water 5 fl oz
  • Sugar 10 oz
  • Starch film 1 tablespoon
  • Activated Baking Soda 1 tablespoon
  • Powdered Sugar 5 oz
  • Salt a pinch
  • Cocoa Powder 0 oz

Step-by-Step Guide

Step 1

For the chocolate sponge cake, separate the egg whites from the yolks. Beat the yolks with 200 grams of sugar. Whip the egg whites until stiff peaks form. Gently fold the egg whites into the yolks. Stir with a wooden spoon.

Step 2

Sift the flour, cocoa powder, salt, and baking soda together. Mix thoroughly.

Step 3

Gradually add the dry ingredients to the egg mixture in three parts, mixing thoroughly each time.

Step 4

Bake in a 24-26 cm springform pan in the oven at 355°F for 30–40 minutes.

Step 5

Let the baked layer cool on a wire rack.

Step 6

For 10 to 15 minutes (while the cakes are baking), sprinkle the cherries with 50 grams of sugar to draw out their juice. Set aside a small handful of cherries for decoration.

Step 7

Prepare the syrup for soaking the cake layers. Bring 100 ml of water and 100 grams of sugar to a boil. Add cherry juice. Boil for a couple of minutes. Allow to cool. Optionally, you can add alcohol.

Step 8

Preparation of cherry cream. Bring 100 ml of water to a boil. Add the cherries. Bring to a boil again. Stir in a teaspoon of cornstarch. Boil for a few minutes until the mixture thickens. Remove from heat. Transfer to another container and cover with plastic wrap (the wrap should touch the cherries to prevent a skin from forming). Let it cool.

Step 9

Whip the cold cream. For those who prefer a sweet cream, you can add 200g of powdered sugar to the cream.

Step 10

Cut the sponge cake into 3 layers. Soak with syrup.

Step 11

Spread cream on the first layer, then add cherries. Repeat. On the last layer, spread cream. Coat the sides of the cake with cream.

Step 12

Grate the chocolate, sprinkle it over the cake, and garnish with cherries.

Step 13

It's advisable to place the cake in the refrigerator to let it set.
