Description

It is important to maintain the proportions so that the biscotti turn out as intended. If you overdo it with one of the ingredients, you will simply end up with tasty cookies. As an alternative, you can use only nuts—of different kinds and double the amount—or replace the dried fruits with chocolate pieces.

Ingredients

  • Wheat Flour 10 oz
  • Sugar 10 oz
  • Chopped almonds 5 oz
  • Dried Apricots 0 oz
  • Raisins 0 oz
  • Baking Powder ½ tablespoon
  • Farm fresh eggs 3 pieces
  • Lemon 1 piece
  • Vanilla salt 0 oz

Step-by-Step Guide

Step 1

Thoroughly mix the sugar with the eggs, then add the flour and baking powder. Mix again, then add the halved almonds, dried apricots, raisins, and the zest of one lemon.

Step 2

Divide the resulting mixture into two parts and shape them into logs on a baking sheet (previously lined with parchment paper), placing them as far apart as possible.

Step 3

Bake in a preheated oven at 355°F for 20 minutes, then remove from the oven and cut across into long pieces, placing them back on the baking sheet and keeping them in the oven for another 10–15 minutes.
