Ingredients
- Shortcrust Cake Mix 15 oz
- Meyer Lemon Juice 5 fl oz
- Citrus Zest Mix 0 oz
- Whole egg 6 pieces
- Sugar 5 oz
- Butter 5 oz
- Cream 10 fl oz
- Powdered Sugar to taste
- Fresh Berries to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Roll out the dough to a thickness of 2-3 mm and cut out 24 circles.
Step 3
Place the dough circles into muffin tins and bake for 10-12 minutes. Let cool.
Step 4
For the filling, mix lemon juice, grated zest, yolks, and sugar. Pour into a saucepan and heat over low heat until the sugar dissolves.
Step 5
Add the butter and stir constantly until the mixture thickens. Remove from heat and let cool.
Step 6
Whip the cream well and fold it into the custard.
Step 7
Spoon the custard into the shortcrust shells and decorate with fresh berries. Lightly dust with powdered sugar.
