Berry Soup with Vanilla Ice Cream
Ingredients
- Star anise 2 pieces
- Red Grape Juice 15 fl oz
- Water 10 fl oz
- Sugar 5 oz
- Cinnamon 2 pieces
- Strawberry 10 oz
- Fresh Berries 5 oz
- Raspberry leaves 5 oz
- Vanilla Ice Cream 20 oz
Step-by-Step Guide
Step 1
In a pot, combine the wine, water, sugar, star anise, and cinnamon. Add 120 g each of strawberries, raspberries, and blueberries. Place over medium heat and bring to a boil. Reduce the heat and simmer for 10 minutes until the berries are soft. Slightly cool and remove the star anise and cinnamon.
Step 2
Transfer the soup to a blender and puree until smooth. Strain through a sieve, pressing out all the juice. Cover with plastic wrap and chill for 8 hours.
Step 3
Cut the remaining strawberries into small pieces.
Step 4
Place a scoop of ice cream in the center of each deep plate and gently pour the soup around it. Sprinkle with the remaining berries and serve immediately.
