  • Raspberry leaves 5 oz
  • Fresh Berries 5 oz
  • Powdered Sugar 10 oz
  • White Beans 1 piece
  • Butter 10 oz
  • Salt a pinch
  • Farm fresh eggs 4 pieces
  • Egg white 5 pieces
  • Red Grape Juice 5 fl oz
  • Wheat Flour 5 oz
  • 10% cream 10 fl oz
  • Dried Apricots 5 oz
  • Milk 15 fl oz
  • Lemon 1 piece
  • Chopped almonds 5 oz

Step-by-Step Guide

Step 1

Blend the almonds and dried apricots (separately) in a blender, but leave some pieces.

Step 2

Grate the zest from the lemon and squeeze out the juice.

Step 3

Mix the sifted flour with salt and almonds.

Step 4

Beat the softened butter (250 g) with powdered sugar (180 g) using a mixer.

Step 5

While mixing, add the eggs one at a time, along with the lemon zest and juice.

Step 6

Then gradually add the flour and dried apricots, mixing everything thoroughly.

Step 7

Grease a springform or silicone pan with the remaining butter, carefully lay out the dough, and bake it in a preheated oven at 180°C for about 25-30 minutes. Remove and let cool.

Step 8

While the base is baking, prepare the cream: bring the milk to a boil in a saucepan, adding the opened vanilla bean and seeds. Then strain the milk.

Step 9

Beat the remaining powdered sugar with the egg yolks, stirring actively, and pour in the milk.

Step 10

Transfer to the saucepan and, stirring constantly, heat the cream over low heat until thickened. After that, cool and refrigerate for 30 minutes.

Step 11

Divide the berries in half, leaving one half for decoration, and mash the other half with a fork.

Step 12

Whip the cold cream with a mixer (you can add a little sugar or powdered sugar).

Step 13

Place the cooled pie base on a plate, cut into small pieces, and generously sprinkle with sweet wine.

Step 14

Wait a couple of minutes, then layer the cream on top, followed by the mashed berries and then the whipped cream.

Step 15

Decorate the finished pie with whole berries.
