Description
This pie is baked at a restaurant called 'Friends' Place', owned by Andrew and Sarah Smith. A plethora of berries, preferably seasonal, tangy poppy seeds, and airy powdered sugar. This recipe is taken from the book 'A Taste of Geography with Nick Johnson: Culinary Guides'.
Ingredients
- Wheat Flour 20 oz
- Dry yeast 0 oz
- Sugar 10 oz
- Milk 15 fl oz
- Salt 0 oz
- Butter 0 oz
- Freeze-dried strawberry powder 5 oz
- Frozen black currant puree 5 oz
- Frozen Cherimoya Fruits 5 oz
- Starch film 0 oz
- Chicken Egg 1 piece
- Poppy seed paste to taste
- Powdered Sugar to taste
- Red Currant 0 oz
- Raspberry leaves 0 oz
- Blackberry 0 oz
Step-by-Step Guide
Step 1
For the dough, combine the yeast, sugar, milk, and salt, and let it sit in a warm place for 10 minutes. Add the prepared yeast mixture to the sifted flour, mix well, and let it rest for 15–20 minutes. Then, add the butter and let it sit for another 10–15 minutes.
Step 2
Divide the prepared dough into approximately 20 pieces. Roll them into balls and then flatten each ball into circles with a diameter of 6–7 cm. Place the filling in the center. Pinch the edges together to form round pastries.
Step 3
For the filling, sauté the frozen berries separately in sugar caramel. To prepare the caramel, melt about 2 tablespoons of sugar for each filling in a frying pan. At the end of cooking, add starch.
Step 4
Place the prepared pastries in a greased baking dish. Arrange them close together, but not touching.
Step 5
Traditionally, one pastry is filled with honey for happiness and good luck.
Step 6
Brush the pastries with beaten egg and sprinkle with pastry poppy seeds. Place them in a warm spot for 10–15 minutes to rise.
Step 7
Bake in a preheated oven at 390°F for 15–20 minutes.
Step 8
Sprinkle the finished pie with powdered sugar and decorate with fresh berries.
