Ingredients
- Milk 5 fl oz
- Whole egg 4 pieces
- Sugar 5 oz
- Corn Starch 0 oz
- Salted Butter 0 oz
- Salt a pinch
- Whipped Cream 10 fl oz
- Raspberry leaves 15 oz
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
In a small saucepan, bring the milk to a boil and remove from heat. Whisk together the egg yolks, 120 g of sugar, and cornstarch. Continue whisking until you achieve a smooth mixture of light yellow color. While continuing to whisk, gradually add the boiled milk, starting with 5 ml, then adding more. Once all the milk is added, place the mixture over low heat and continue stirring until it reaches a thick, creamy consistency.
Step 2
Remove from heat and add the butter and salt. Mix well and transfer the mixture to another container. Cover with plastic wrap to prevent a skin from forming. Place in the refrigerator. After cooling, fold in the whipped cream, stirring constantly.
Step 3
Preheat the grill. Mix the raspberries with 15 g of sugar and add half of the berries to the prepared mixture.
Step 4
Spread the mixture into baking dishes and top with the remaining raspberries. Sprinkle with sugar and bake for 7 minutes until a golden crust forms. Serve immediately.
