Berry Fool with Black Pepper

Ingredients

  • Sugar ½ cup
  • Raspberry leaves 5 oz
  • Ground Black Pepper 1 teaspoon
  • Grand Marnier Liqueur 3 tablespoons
  • Cream (40%) 1½ cups
  • Strawberry 15 oz

Step-by-Step Guide

Step 1

In a small saucepan, combine the raspberries and sugar. Cover with a lid and place over low heat, stirring occasionally, until the sugar dissolves and the berries soften, about 5-10 minutes. Transfer to a sieve and press out all the juice into a bowl. Add the pepper. Cool for 20 minutes until cold. Then fold in the liqueur.

Step 2

In a large bowl, whip the cream. Then fold in the raspberry mixture and the halved strawberries, reserving 4 whole berries for garnish.

Step 3

Divide into 4 dessert cups and top with the reserved strawberries.
