
Berry Flambé

Use only fresh berries.
Ingredients
- Strawberry 5 oz
- Marinated cherries 5 oz
- Raspberry leaves 5 oz
- Butter 0 oz
- Brown Sugar 0 oz
- Port Wine 0 fl oz
- Cognac 0 oz
- Vanilla Ice Cream 5 oz
- Fresh Mint 4 pieces
Step-by-Step Guide
Step 1
Wash and dry the fresh berries. Cut the strawberries into quarters.
Step 2
Heat the butter in a skillet, add the sugar and caramelize slightly, then pour in the port wine. Stir and boil for 2 minutes.
Step 3
Add the berries to the skillet and, gently stirring, boil the berries for 2 minutes, pour in the cognac and ignite immediately. Wait for the cognac to burn off and serve the flambé in dessert bowls. Top each serving with a bit of ice cream. You can garnish with a sprig of fresh mint.
