Berry Cheesecake
Baking and Desserts • European
Description
The fat content of the cottage cheese should be up to 18%.
Ingredients
- Wheat Flour ½ cup
- Cottage cheese 25 oz
- Sour Cream 5 oz
- Sugar 1 cup
- Milk 5 fl oz
- Farm fresh eggs 5 pieces
- Vegetable Oil ½ cup
Step-by-Step Guide
Step 1
Blend the cottage cheese with a blender, adding about 100 grams of sour cream. The main goal is to achieve a smooth mixture without lumps.
Step 2
Separate the eggs into whites and yolks. Whip the egg whites with ½ cup of sugar until foamy, then add ½ cup of flour, the remaining 5 yolks, and ½ cup of refined vegetable oil. Pour part of this mixture into a high-sided baking dish (5–6 cm deep), measuring 35–40x20–25 cm, in a 5 mm layer.
Step 3
Add the prepared cottage cheese to the remaining mixture. Season with salt, add ½ cup of sugar, ⅓ cup of milk, and vanilla sugar. Mix the batter with a mixer and carefully pour it over the first layer. The first layer will inevitably rise at the edges.
Step 4
Place in a preheated oven for 40–60 minutes, baking at 180–390°F. During the process, the cake will rise and take on a brownish hue. Once removed from the oven, spread a mixture of sour cream and sugar on top — 50 grams of sour cream + 2 tablespoons of sugar. Return it to the turned-off oven to cool.
Step 5
Top the cake with fruits and/or berries — fresh or canned. Then pour over the jelly made from two cups of syrup in which the fruits were blanched and 1 cup of dissolved gelatin (2 tablespoons of gelatin per 1 cup of water). Refrigerate for 2 hours.
