  • 10% cream 15 fl oz
  • Strawberry 20 oz
  • Fresh Berries 5 oz
  • Butter 5 oz
  • Egg white 1 piece
  • Wheat Flour 5 oz
  • Salt a pinch
  • Sugar 5 oz

Step-by-Step Guide

Step 1

Prepare the shortcrust pastry. For this, mix the butter with flour and 50 g of sugar until it resembles bread crumbs, then add the egg, salt, and knead until elastic. Wrap in plastic wrap and refrigerate for 15 minutes.

Step 2

Preheat the oven to 355°F. Take the dough out, place it in a mold lined with parchment paper. The dough needs to be pricked with a fork all over the bottom surface. If the crust breaks while placing it in the mold, don't worry, just 'patch' it up directly in the mold. But press the dough pieces tightly together, or else they will separate when heated.

Step 3

Place another sheet of paper on the crust, fill it with baking beans or peas, and bake in the oven for 20–25 minutes.

Step 4

Make the cream. Whip the cream with the remaining sugar until creamy. If it seems not sweet enough, feel free to add more sugar. Place in the refrigerator.

Step 5

Remove the crust from the oven, take it out of the mold, and let it cool in the refrigerator for about 10–15 minutes.

Step 6

Trim the stems off the strawberries, reserving some for decoration and cutting the rest for filling. Place the sliced strawberries on the cooled crust, then top with the cream. Decorate with berries and refrigerate for an hour or two to set.
