Berries in Champagne Jelly
Ingredients
- Gelatin 1½ tablespoons
- Sugar 10 oz
- Dry Champagne 0 qt
- Citrus Zest Mix 4 pieces
- Orange zest 4 pieces
- Strawberry 10 oz
- Fresh Berries 10 oz
Step-by-Step Guide
Step 1
Pour 500 ml of champagne into a bowl and let the gases escape. Sprinkle the gelatin on top, but do not stir. Allow it to swell. Pour the remaining champagne into a saucepan with sugar and zest, and heat slowly, stirring occasionally, for 3-4 minutes until the sugar dissolves.
Step 2
Remove the saucepan from heat, add the gelatin mixture, and stir until dissolved. Let it cool, then remove the zest.
Step 3
Distribute the berries into 8 wine glasses and pour the jelly over them. Place in the refrigerator for 6 hours or overnight. Remove from the refrigerator 15 minutes before serving.
