Description
Germany gifted the world the Christmas tree and the Advent calendar. However, many festive customs and traditions have been preserved only for itself: for example, while Christmas here is traditionally celebrated with roasted duck or goose, New Year's is exclusively marked by a generous piece of roasted pork shoulder or ham. This is because it is believed that birds will fly away, taking luck with them, whereas the pig will stay put and bring abundance and prosperity into the home. The taste of New Year's in Berlin is embodied by the famous filled donuts known as berliners. Once a symbol of the divided city remaining united, today they have become just a beloved festive dessert.
Ingredients
- Wheat Flour 20 oz
- Dry yeast 0 oz
- Salt 1 tablespoon
- Buttermilk 5 fl oz
- Chicken Egg 2 pieces
- Sugar 10 oz
- Butter 5 oz
- Vanilla extract ½ spoons
- Ground Cinnamon 0 oz
- Chili jam 20 oz
- Vegetable Oil 1½ l
Step-by-Step Guide
Step 1
Dissolve the yeast in 100 ml of warm water. Let it sit for 5 minutes. When the yeast begins to foam, add the flour, salt, buttermilk, eggs, 75 grams of sugar, oil, and vanilla extract. Mix the dough in a mixer on low speed. After 1 minute, increase the speed to maximum and knead for another 2 minutes.
Step 2
Grease a large bowl with oil, transfer the dough into it, cover with plastic wrap, and let it rise in a warm place for 2 hours. The dough should double in size.
Step 3
While the dough is rising, mix the remaining sugar with the cinnamon in a bowl. Transfer the jam to a piping bag fitted with a narrow round tip.
Step 4
When the dough has risen, punch it down and roll it out to a thickness of 1.5 to 2 cm. Cut out twelve circles with a diameter of about 10 cm. Place the dough on a baking sheet lined with parchment paper and generously dusted with flour.
Step 5
In a deep saucepan, heat vegetable oil for frying to 355°F. Carefully fry the donuts until they are golden brown.
Step 6
Remove the donuts with a slotted spoon and transfer them to a paper towel to drain excess oil. Allow the donuts to cool.
Step 7
When the donuts have cooled enough not to burn your fingers, roll them in a mixture of sugar and cinnamon. Then, carefully make a hole in each donut and fill it with jam until it's about three-quarters full.
