
Bella Italia Tomato Soup

A recipe from the new summer menu 'BELLA ITALIA' by chef John Smith.
Ingredients
- Tomatoes 5 lbs
- Mild Chili Spice 0.2 pieces
- Garlic 2 cloves
- Chicken Broth 10 fl oz
- Fresh basil leaves to taste
- Orange Bell Peppers 0.5 pieces
- Olive Oil 5 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Blanch fresh tomatoes in boiling water for 1-2 seconds. Peel off the skin and remove the stem.
Step 2
Blend the tomatoes until smooth with olive oil, salt, finely chopped chili pepper, garlic, and basil leaves.
Step 3
Pour the vegetable broth into the mixture and blend for 3-4 minutes.
Step 4
Transfer the mixture to a bowl and heat in the microwave for 1 minute.
Step 5
Dice the bell pepper and sauté in a small amount of oil.
Step 6
Dice the tomato, mix it with the pepper, and add to the soup.
Step 7
Drizzle the finished dish with olive oil and garnish with a sprig of basil.
Step 8
Serve with croutons. The soup can be served hot or cold, as desired.
