Ingredients
- Milk 5 fl oz
- Wheat Flour 2 tablespoons
- Sugar 5 oz
- Water 5 fl oz
- Cinnamon 1 piece
- Vanilla extract to taste
- Egg white 4 pieces
- Ground Cinnamon to taste
- Puff Pastry 20 oz
Step-by-Step Guide
Step 1
Preheat the oven to 480°F. In a small bowl, mix the flour and 60 ml of milk until smooth.
Step 2
Bring the remaining milk to a boil and mix it with the milk-flour mixture.
Step 3
Beat the egg yolks until smooth and gradually pour in the hot milk while continuing to whisk.
Step 4
In a small saucepan, without stirring, bring the sugar, water, and cinnamon to a vigorous boil. Remove from heat and pour into the milk-egg mixture, stirring constantly. Add the vanilla extract and remove the cinnamon stick.
Step 5
Pour the resulting liquid back into the saucepan where the syrup was cooked. Set over the lowest heat and cook, stirring constantly, until the liquid reaches the consistency of a thick sauce. Strain the cream through a sieve and set aside.
Step 6
Take the puff pastry out of the refrigerator and roll it out thinly.
Step 7
Cut into 12 squares and place them in the muffin tin, forming baskets.
Step 8
Fill the baskets with warm cream to 4/5 full and place the tin in the preheated oven.
Step 9
Bake for 12–15 minutes. The baskets should be golden brown, and dark spots should appear on the cream.
Step 10
Remove the tin from the oven, let it sit for 5 minutes, and then remove the pastries from the tin. Transfer to a cooling rack for at least 20 minutes. Before serving, generously sprinkle with cinnamon or powdered sugar.
