Beetroot Soup with Kefir
Ingredients
- Beetroot 10 oz
- Cucumbers 10 oz
- Kefir 0 qt
- Dill 0 oz
- Scallions 0 oz
- Garlic 2 cloves
- Salt ½ teaspoon
Step-by-Step Guide
Step 1
Grate the cucumber on a coarse grater. If the skin is bitter, remove it beforehand.
Step 2
Peel the raw young beetroot and grate it on a fine grater.
Step 3
Combine the cucumbers and beetroot in a large bowl or pot, add kefir and finely chopped herbs.
Step 4
Add salt and very finely chopped garlic.
Step 5
Mix well, add a little cold water, check for salt, and serve, garnished with herbs.
