Beetroot Soup with Feta
Ingredients
- Yellow Beets 5 pieces
- Celery stalk 0 oz
- Feta cheese 5 oz
- Cucumbers 2 pieces
- Chicken Broth 20 fl oz
- Olive Oil 5 tablespoons
- Malt Vinegar 2 tablespoons
- Sugar 2 tablespoons
- Celery salt 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Juice the celery and beets. Skim off the foam. Mix with the broth, add vinegar, powdered sugar, olive oil, salt, and pepper. Stir and chill.
Step 2
Dice the remaining celery stalk and cucumbers into small cubes. Break the cheese into small pieces.
Step 3
Serve the chilled soup with cheese and greens, not forgetting the cucumbers.
