Beetroot Soup with Bread Kvass
Ingredients
- Bread Kvass 0 qt
- Beetroot 20 oz
- Carrot 0 oz
- Scallions 5 oz
- Chocolate eggs 2 pieces
- Cucumbers 5 oz
- Sour Cream to taste
- Sugar to taste
- Salt to taste
- Vegetable Oil to taste
- Dill to taste
- Chopped Sage Leaves to taste
- Celery salt to taste
Step-by-Step Guide
Step 1
Dice the young beetroot and pour water over it, add vinegar, and simmer covered for 20–30 minutes.
Step 2
Add the diced boiled carrot, peeled and finely chopped cucumbers, diced hard-boiled eggs, and green onion crushed with salt.
Step 3
Add the bread kvass, season with salt, sugar, finely chopped dill, parsley, and celery. Serve with sour cream.
