Beetroot Soup
Ingredients
- Olive Oil 1 tablespoon
- Scallions 1 bunch
- Campbell's Beef Broth 10 fl oz
- Worcestershire Sauce 1 teaspoon
- Beetroot 15 oz
- Sour Cream 2 tablespoons
- Chives ½ teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a pot, add finely chopped green onion, and sauté for 2–3 minutes until soft.
Step 2
Pour in the beef broth, drizzle with Worcestershire sauce, and bring to a boil. Chop the beetroot. Transfer the broth to a blender, add the beetroot, and blend. Add seasonings to taste.
Step 3
Pour back into the pot, gently heat. Add a little water if you find the soup too thick.
Step 4
Serve in soup bowls, adding a generous spoonful of sour cream. Sprinkle with finely chopped chives. Enjoy.
