- Water 5 fl oz
- Scallions 1 bunch
- Cucumbers 1 piece
- Dill 1 bunch
- Salt to taste
- Sour Cream 1 tablespoon
- Chicken Egg 1 piece
Step-by-Step Guide
Step 1
Wash the large beetroot, peel it, grate it, and place it in a pot along with tomato puree (pass a fresh tomato through a sieve). Pour in hot water (200 grams) and simmer on low heat for 1 to 1.5 hours. To prevent the beetroot from sticking to the bottom, gradually add water as needed.
Step 2
Towards the end of stewing the beets, add 200 grams of hot water to the pot, bring to a boil for 10 minutes, and then cool.
Step 3
Wash the cucumber, onion, and dill with boiled water, finely chop them, add to the beetroot soup, season with salt, and mix well.
Step 4
Pour sour cream mixed with boiled egg yolk into the bowl with the beetroot soup.
