
Beet Soup with Orange and Mint

This is an interpretation of a recipe by a well-known chef.
Ingredients
- Yellow Beets 30 oz
- Oranges 2 pieces
- Fresh Mint 12 pieces
- Butter 0 oz
- Onion 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a large pot, sauté the onion in butter until translucent.
Step 2
Wash and peel the beets, cut them into 2 cm cubes. Add them to the onion, cover with a lid, and cook for another 20 minutes, stirring occasionally.
Step 3
Pour in 1.2 liters of cold water, add salt and pepper. Bring to a boil over high heat, reduce the heat, and simmer for 30 minutes.
Step 4
Let the dish cool slightly and blend in a blender until smooth. Add the finely grated zest of 2 oranges and gently mix.
Step 5
Before serving, place a little mint (12 chopped sprigs) at the bottom of each bowl, pour the soup into the bowls, and garnish with mint leaves.
