- Beef 15 oz
- Onion 1 piece
- Potato 2 pieces
- Carrot to taste
- Sorrel 5 oz
- Salt to taste
- Bay leaf to taste
- Dill to taste
- Chicken Egg 3 pieces
- Sour Cream 5 oz
- Water 5 qt
Step-by-Step Guide
Step 1
Take a 4–5-liter enamel pot, place a piece of meat (preferably whole) inside, fill it with cold water until three-quarters full, and put the pot with the meat on the heat. Instead of beef, pork, chicken, or ham can also work well. If you want to skip the meat altogether, you can simply add 4–5 chicken bouillon cubes to the water.
Step 2
Wait a few minutes until the broth starts to boil, then reduce the heat and begin skimming off the coagulated proteins, or simply put, the foam. Cook the broth over low heat for about 1 hour, adding salt to taste.
Step 3
Peel, wash, and chop the potatoes. Add them to the broth.
Step 4
While the potatoes are boiling, sauté the carrots and onions in vegetable oil. Chop the sorrel and herbs finely. About 15 minutes after adding the potatoes, you can add the chopped green onions to the pot. After another 2-3 minutes, add the chopped sorrel, carrots, and onions as well. Stir everything well and wait for it to come to a good boil (a maximum of 8-10 minutes). Finally, 3-5 minutes before finishing cooking, add the bay leaf.
Step 5
While preparing the sorrel soup, boil 3 to 5 eggs hard. Then, cover the eggs with cold water and let them sit for about five minutes. After that, peel the eggs and cut them in half or quarters, or chop them into small pieces with a knife.
Step 6
Now take a plate, place finely chopped meat at the bottom, add an egg, and pour in the soup. Don't forget to top it off with a tablespoon of sour cream and you can sprinkle it with finely chopped dill.
