  • Water 5 qt
  • Beef 10 oz
  • Pearl barley ½ glasses
  • Parsley 1 piece
  • Carrot 1 piece
  • Celery salt 1 piece
  • Butter 1 tablespoon
  • Pickled Cauliflower 3 pieces
  • Passata Tomato Sauce 1 tablespoon
  • Potato 2 pieces
  • Cucumber Brine 1 glass
  • Whole egg 1 piece
  • Sour Cream 2½ spoons
  • Bay leaf to taste
  • Salt to taste
  • Green peppercorns to taste
  • Herbs to taste

Step-by-Step Guide

Step 1

Simmer lightly salted beef broth, strain it, and cut the meat into portions.

Step 2

Add the soaked pearl barley to the broth and cook for 40 minutes.

Step 3

Add the chopped and sautéed root vegetables with tomato, diced pickles, potatoes, boiled meat, and seasonings, and cook for 20 minutes.

Step 4

Before serving, pour the strained cucumber brine that has been boiled into the soup, add the sour cream mixed with the egg yolks, adjust the salt to taste, and bring it to a boil.

Step 5

When serving, sprinkle with chopped herbs.
