We sent beef meatballs into a boiling broth—this can be vegetable, chicken, or meat broth—and then strained it. The result is simple, hearty, and beautiful, especially if you take the time to make homemade wheat croutons.
Ingredients
- Lean Beef 20 oz
- Whole egg 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Chicken Broth 2½ l
- Herbs to taste
- Croutons to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Combine the minced meat with the egg yolk. Season with salt and pepper, and mix thoroughly.
Step 3
Shape small, neat meatballs.
Step 4
Bring the broth to a boil (it can be vegetable, beef, or chicken).
Step 5
Add the meatballs to the boiling broth and cook for 5 minutes.
Step 6
Remove the meatballs with a slotted spoon.
Step 7
Strain the broth.
Step 8
Finely chop the herbs.
Step 9
Arrange the meatballs on plates and pour broth over them.
Step 10
Garnish the finished soup with herbs and serve it with croutons or toasted bread.
