Description
This recipe allows you to make a thick, rich beef broth that can be used in various ways. It’s quite simple to prepare, provided you have 3.5 hours of free time. It's essential to use bones to make the beef broth, as this will ensure it's hearty and flavorful. Some of the other ingredients are optional, while others are necessary. Even if you don't have tomatoes, the green part of leeks, or thyme on hand, the broth will still turn out well, as long as you include onions, carrots, celery, bay leaves, and pepper in the pot.
Ingredients
- Beef hoof 5 lbs
- Onion 2 heads
- Carrot 2 pieces
- Celery stalk 2 pieces
- Garlic 1 head
- Thyme 3 sprigs
- Green part of leeks 1 piece
- Parsley 3 sprigs
- Tomatoes 1 piece
- Bay leaf 1 piece
- Allspice berries 10 pieces
- Green peppercorns 10 pieces
- Water 5 qt
Step-by-Step Guide
Step 1
Cut the bulbs in half without peeling them.
Step 2
Cut the carrot and celery stalks in half.
Step 3
Cut the head of garlic in half, leaving the skin on.
Step 4
Arrange the vegetables and the soup mix on a baking sheet and place them in an oven preheated to 390°F for 25–30 minutes. The meat should develop a golden-brown crust.
Step 5
Pour cold water into a pot, then add the meat and vegetables from the baking tray.
Step 6
Add the halved tomato, thyme, parsley, green part of the leek, bay leaf, black pepper, and allspice. Bring to a boil and simmer uncovered for 3 hours.
Step 7
Strain the prepared beef broth through a fine mesh sieve.
