Beef Bozbash with Chickpeas and Vegetables
Ingredients
- Boneless pork shoulder 30 oz
- Chickpea 5 oz
- Onion 2 heads
- Tomatoes 2 pieces
- Salad Potatoes 5 pieces
- Bay leaf 3 pieces
- Herbs to taste
- Turmeric to taste
- Basil to taste
- Salt to taste
- Ground Black Pepper to taste
- Baking Tomatoes 3 pieces
Step-by-Step Guide
Step 1
Soak the chickpeas for several hours. Then take the beef, cut it into cubes, add the chickpeas, and cover with water (4 l). Bring to a simmer over low heat.
Step 2
Next, slice the onion into half rings, dice 2 fresh tomatoes and 3 canned tomatoes, and sauté them. Cut the potatoes into slices.
Step 3
While the broth is cooking, add 3 bay leaves; once it boils, remove them. Simmer the broth for about 1.5 to 2 hours.
Step 4
Then add the sautéed mixture and potatoes, and cook until the potatoes are done. Add a little turmeric and basil, season with pepper and salt, and add herbs.
