Bean Soup with Smoked Sausages

Description
You can use various types of legumes, and you can also replace tomato paste with fresh or canned tomatoes. Garlic gives the sausages a special flavor, its use is a matter of personal preference.
Ingredients
- Chicken Broth 5 qt
- Pea shoots 1 cup
- Beans 1 cup
- Lentils 4 tablespoons
- Salad Potatoes 3 pieces
- Semi-Smoked Sausage 2 pieces
- Carrot 1 piece
- Onion 1 head
- Garlic to taste
- Salt to taste
- Mild Chili Spice to taste
- Passata Tomato Sauce 5 oz
- Spices to taste
Step-by-Step Guide
Step 1
In pre-prepared salted broth (it can be beef or chicken, as you prefer), add the previously soaked peas and thoroughly rinsed lentils. Cook for about 20–30 minutes (depending on how quickly your potatoes cook).
Step 2
Peel the potatoes and cut them into small cubes. Cut the carrot and onion into cubes or strips as you prefer.
Step 3
Add the potatoes to the soup. At the same time, you can add the beans, as they are canned and should be drained beforehand. Wait for it to boil and start sautéing the carrot and onion, preferably in clarified butter.
Step 4
While the sauté is cooking, in another pan over low heat, sauté the smoked sausages with 2–3 cloves of garlic. Add them to the soup after the sauté is ready.
Step 5
5–10 minutes before the potatoes and legumes are done, add the tomato paste, about 1–1.5 tablespoons, along with spices and chili.
