Bean Soup with Sizzling Chorizo
Ingredients
- Olive Oil 2 tablespoons
- Butter 1 teaspoon
- Onion 1 head
- Celery stalk 1 piece
- Garlic 2 cloves
- Thyme ½ teaspoon
- Chicken Broth 15 fl oz
- Chorizo 5 oz
- Canned Baby Beets 15 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat 1 tablespoon of olive oil and a cube of butter in a large pot. Heat a skillet. Add finely chopped onion, celery, and garlic, and sauté for 2–3 minutes.
Step 2
Add finely chopped thyme to the pot for 30 seconds and pour in the broth. Add the rinsed beans to the broth, bring to a boil. Then reduce the heat and simmer for 4–5 minutes. Add seasonings to taste.
Step 3
Pour 1 tablespoon of olive oil into the heated skillet. Add diced chorizo and sauté for 3–4 minutes until it sizzles and starts to release its juices.
Step 4
Blend the soup in a blender and pour into soup bowls. Top with sizzling chorizo and drizzle the remaining oil from the skillet over the bowls.
