Bean Soup with Sausage
Ingredients
- White Beans 1 cup
- Chicken Broth 0 qt
- Onion 1 piece
- Orange Bell Peppers 1 piece
- Vegetable Oil 1 tablespoon
- Paprika 1 teaspoon
- Potato 1 piece
- Semi-Smoked Sausage 5 oz
- Salt to taste
- Chopped Sage Leaves 1 teaspoon
Step-by-Step Guide
Step 1
Soak the beans in cold water for 2–3 hours or overnight. Then cook until tender, adding salt. Dice the vegetables.
Step 2
Heat the oil in a pan and sauté the onion with the pepper. Cut the sausage into rounds or cubes.
Step 3
In a pot with the cooked beans, add the diced potato and sautéed vegetables. Pour in the broth, bring to a boil, add the sausage and parsley, and cook for 5 minutes.
