Ingredients
- Beans 15 oz
- Smoked pork knuckle 1 piece
- Butter 1 tablespoon
- Onion 1 head
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the dried beans in water overnight. In a large pot, pour in 8 cups of water, add the beans, and include the pork. Bring to a boil, then reduce the heat and simmer until the beans begin to break down, which will take about an hour.
Step 2
Meanwhile, heat the butter in a frying pan and sauté the finely chopped onion for five minutes. Add it to the pot with the soup.
Step 3
Remove the pork, let it cool slightly, then remove the bones, skin, and excess fat. Finely chop the remaining meat and return it to the pot with the soup. Add salt and pepper to taste.
