Bean and Mushroom Soup

Ingredients

  • Beans 5 oz
  • Fresh Mushrooms 5 oz
  • Salad Potatoes 2 pieces
  • Onion 1 piece
  • Salt to taste
  • Bay leaf 1 piece
  • Ground Black Pepper to taste
  • Carrot 1 piece
  • Herbs to taste

Step-by-Step Guide

Step 1

Soak the beans, preferably overnight. Rinse the beans, place them in a pot, cover with water, and bring to a boil.

Step 2

After 30 minutes, cook the mushrooms in the same water until almost done. Strain the mushroom broth into a separate bowl to add to the pot later.

Step 3

Rinse the mushrooms well and chop them. Dice the onion and julienne the carrot. Sauté the onion, carrot, and mushrooms in vegetable oil.

Step 4

Peel and finely chop the potatoes, add them to the beans, then add the sautéed mixture. Cook until done over low heat.

Step 5

When serving, add herbs to the bowl.
