Ingredients

  • Gelatin 0 oz
  • Milk 10 fl oz
  • White Chocolate 5 oz
  • 33% Cream 10 fl oz
  • Egg white 3 pieces
  • Vanillin to taste
  • Sugar 0 oz

Step-by-Step Guide

Step 1

Soak the gelatin in cold water.

Step 2

Add a little vanillin to the milk and bring it to a boil over low heat, then turn off and let it cool slightly.

Step 3

Whisk the yolks with sugar until light yellow foam forms. Gradually pour the hot milk into the yolks while constantly stirring.

Step 4

Place this mixture over a water bath on low heat and cook, stirring, until it thickens slightly.

Step 5

Turn off the heat, add the gelatin, and stir until completely dissolved.

Step 6

Chop the white chocolate and melt it in the microwave. Add it to the egg-gelatin mixture. Let it cool.

Step 7

Whip the cream and gradually fold it into the chocolate mixture, gently mixing from the bottom up. The mixture should remain airy.

Step 8

Pour the mixture into molds and refrigerate for a few hours until set.
