Ingredients
- Sugar 5 oz
- Milk 0 qt
- Basil 0 oz
- Whole egg 14 pieces
Step-by-Step Guide
Step 1
Pour milk over 60 grams of sugar, bring to a boil, then add finely chopped basil (reserve one sprig for garnish). Let the mixture steep for ten minutes.
Step 2
Separate the egg whites from the yolks. Whisk the yolks with the remaining sugar. Bring the milk back to a boil, then pour it into the egg-sugar mixture. Heat everything together to 185°F over a water bath, strain it, and then place it in an ice bath before refrigerating it overnight.
Step 3
Churn the mixture in an ice cream maker and garnish with a sprig of basil when serving.
