  • Water 5 fl oz
  • Wheat Flour 5 oz
  • Butter 5 oz
  • Farm fresh eggs 4 pieces
  • Vanilla salt 0 oz
  • Sugar 0 oz
  • Salt a pinch

Step-by-Step Guide

Step 1

Combine water and milk, add vanilla, and place on the stove. Heat well. Add sugar and salt.

Step 2

When the water and milk mixture starts to boil, add the butter. Let the mixture boil for another 5–10 seconds.

Step 3

Add all the flour to the boiling mixture and mix well. Keep the dough on the heat for a few more seconds, stirring constantly.

Step 4

Set the dough aside and wait for it to cool to 140°F.

Step 5

When the dough has cooled to the desired temperature, start adding the eggs one at a time, adjusting the dough to the desired consistency (based on personal experience, you will need about 4.5 eggs).

Step 6

Line a baking sheet with parchment paper. Using a pastry bag, shape and place the future profiteroles (4–5 cm apart).

Step 7

Bake the profiteroles in a preheated oven at 390°F for 10 minutes. DO NOT OPEN THE OVEN!!!

Step 8

Reduce the temperature to 355°F and bake for another 10 minutes.

Step 9

Allow the finished profiteroles to cool.

Step 10

Fill the profiteroles with the filling.
