Basic Citrus Pie Recipe

Description
Instead of lemon, you can use other citrus fruits: limes (2 pieces), oranges (1 piece), grapefruits (1/2 piece), pomelo (1 piece) (I haven't made it solely with pomelo, as I find it not sour enough). A mix of zest from different citrus fruits is especially tasty when using lemon juice or lemon + 1/2 orange as a base. Optionally, you can prepare a glaze: whip lemon juice (4 tablespoons) and 150 g powdered sugar until a white, thick mass forms, and pour it over the pie.
Ingredients
- Butter 5 oz
- Sugar 5 oz
- Eggs 2 pieces
- All-purpose flour 5 oz
- Lemon 1 piece
- Baking Powder 0 oz
Step-by-Step Guide
Step 1
Cream the softened butter with sugar.
Step 2
Add the eggs one at a time.
Step 3
Then add the flour.
Step 4
Mix everything thoroughly and incorporate the zest of the whole lemon and the juice of half a lemon (you can add the juice of the whole lemon).

Then add the baking powder and mix thoroughly.
Step 6
Line a baking pan with parchment paper (mine has a diameter of 22-23 cm). Pour in the batter and smooth it out.
Step 7
Bake in a preheated oven at 375°F until golden brown (about 20 minutes), but keep an eye on it as baking times may vary depending on your oven.
Step 8
Let the pie cool slightly, then carefully remove it from the pan.
