Barley and Tomato Soup
Ingredients
- Olive Oil 0 fl oz
- Onion 1 head
- Pearl barley 5 oz
- Chicken Broth 25 fl oz
- Bay leaf 3 pieces
- Thyme 3 stalks
- Garlic 3 cloves
- Salt to taste
- Ground Black Pepper to taste
- Baking Tomatoes 20 oz
Step-by-Step Guide
Step 1
Heat olive oil in a saucepan, add chopped onion, garlic, thyme, and peeled tomatoes, and sauté for 10 minutes. Stir in the barley, pour in the broth, and add a bay leaf.
Step 2
Bring to a gentle boil and cook, uncovered, for 30–40 minutes until the grains are tender. At the end, season with salt and pepper to taste and ladle the soup into bowls. If desired, drizzle each serving with additional olive oil before serving.
