Ingredients
- Powdered Sugar 15 oz
- Sweetened Condensed Milk with Coffee 2 cans
- Bananas 6 pieces
- 10% cream 20 fl oz
- Instant coffee 1 tablespoon
- Vanilla Pod 1 piece
- Wheat Flour 20 oz
- Butter 10 oz
- Chocolate eggs 2 pieces
- Citrus Zest Mix 1 piece
- Milk 3 tablespoons
Step-by-Step Guide
Step 1
Dough: 500 g of flour, 100 g of powdered sugar, 250 g of chilled butter, zest of 1 lemon, 2 large eggs beaten, a little milk, flour for dusting. The easiest way to make this dough is in a food processor - in that case, it will turn out perfectly, but if you don't have one or prefer old-fashioned methods, be sure to chill the butter well (it's best to keep it in the freezer for about 20-30 minutes) and keep your hands under cold running water, as the butter should not melt.
Step 2
Sift the flour and powdered sugar onto a clean work surface. Mix them with the butter cubes using your hands until you get fine crumbs. If you're using a food processor, just pulse this mixture for about 20-30 seconds. At this stage, you can add flavor, for example, lemon zest.
Step 3
Add the eggs, milk to the dough, and mix gently but decisively, but do not overdo it, otherwise the dough will turn out elastic and rubbery instead of crumbly - not what we want. In a food processor, simply pour the eggs and flour into the crumb mixture and pulse until the mixture forms a ball. Shape the dough into a ball, lightly dust with flour, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least half an hour.
Step 4
Preheat the oven to 180°C.
Step 5
Prepare the dough (remember that you can experiment with additions to the basic dough or simply add more powdered sugar), roll it out, and place it in a greased 28 cm diameter springform pan (you can also use small individual baking dishes).
Step 6
Bake without filling for about 15 minutes until the dough is golden brown. Let it cool.
Step 7
Spread the base of the pie with sweetened condensed milk (the thickness of the layer depends solely on your preference).
Step 8
Slice the bananas and arrange them on top of the condensed milk.
Step 9
Whip the cream, add the coffee (you can reduce the amount if you want a milder flavor), and the vanilla seeds.
Step 10
Spoon the coffee cream over the banana slices and serve immediately.
