Bananas with Rum Silabub

Ingredients

  • Bananas 6 pieces
  • Black licorice 4 tablespoons
  • Raisins 5 oz
  • Orange zest 2 teaspoons
  • Orange zest 1 teaspoon
  • Orange juice concentrate 2 tablespoons
  • Lime Juice 3 tablespoons
  • Dark rum 5 tablespoons
  • 33% Cream 5 fl oz
  • Nutmeg to taste

Step-by-Step Guide

Step 1

Peel the bananas and cut them into thick slices.

Step 2

Place the raisins in a bowl and soak them in 3 tablespoons of rum for 30 minutes.

Step 3

Prepare the silabub. In a bowl, combine 2 tablespoons of rum, 2 tablespoons of lime juice, and 2 tablespoons of treacle, and whisk together. Add the cream and mix the resulting mixture with a mixer. Cover the silabub with plastic wrap and refrigerate.

Step 4

Grease a baking dish with butter, sprinkle the bottom with one tablespoon of treacle, layer the bananas, drizzle with rum, sprinkle with raisins, and the orange and lime zests, then pour in their juices. Season with the remaining treacle.

Step 5

Cover the dish with foil and bake at 355°F for 25 minutes. Remove the foil and bake for another 5 minutes.

Step 6

Before serving, whip the silabub, spoon it over the bananas, and sprinkle with grated nutmeg.
