Banana-Strawberry Casserole
Ingredients
- Oat Flour 5 oz
- Rice Flour 5 oz
- Eggs 4 pieces
- Natural Yogurt 5 fl oz
- Non-Fat Dry Milk 3 tablespoons
- Vanillin a pinch
- Banana 1 piece
- Strawberries 10 oz
- Sugar Substitute to taste
Step-by-Step Guide
Step 1
Separate the egg whites from the yolks.
Step 2
Mix both types of flour with baking powder, dry milk, vanillin, and sugar substitute (I used stevia).
Step 3
Combine the yolks with the natural drinking yogurt, add the dry mixture, and mix thoroughly with a mixer (I also added 2 drops of strawberry flavoring).
Step 4
Beat the egg whites until stiff peaks form (they should not fall out of an inverted bowl).
Step 5
Gently fold the egg whites into the batter, mixing from the bottom up.
Step 6
Slice the strawberries and banana.
Step 7
Add the whole banana and part of the strawberries to the batter and mix.
Step 8
Pour the batter into a silicone mold, arrange the remaining strawberry slices on top, and bake in a preheated oven at 175°C for 40 minutes (do not overbake, check for doneness by browning and the 'toothpick test').
